Lick! puts the fun back into the ice cream parlour

For too long, great power has been concentrated in the hands of Brisbane restaurants and cafes. They’ve had easy access to something the rest of us could only dream of. Whenever a chef needs to bump their dessert up a notch with some custom ice cream – caramelised pineapple flavour, for example – they turn to Lick!

Until last week, an ordinary customer who wanted to get their hands on this good stuff would never have been able buy all these fancy flavours. That’s all changed now Lick! has opened its first retail ice creamery at Graceville.

Okay, so you won’t be able to ask Grant, the owner, to make you a custom ice cream, but with 18 offbeat flavours, it will be a long time before you’ve tried every delicious combination.

Some of the ice creams are clearly made for each other. There’s roasted banana, made with actual bananas for that non-lolly taste. It’s great on its own, but mix it with the caramelised condensed milk ice cream and you’ve got yourself banoffee pie in a cone. If you’re not in a gourmet mood, try the popcorn and honey, or redskin flavours.

Then there’s the rich, spiced apple cider ice cream, which goes beautifully with one of Lick’s apple pies. That’s right. There are sweet baked goods on offer here, too.

Most interesting is a spin on the doughnut craze still sweeping through Brisbane: doffles. These are small waffles made of doughnut batter and accompanied by (what else?) ice cream and butterscotch sauce. Although all the ice cream already in my stomach made it, sadly, impossible to try one of these on my visit, I have faith that these doffles are more than just the loud thud of a bandwagon being jumped on.

Appropriately enough, there are also custom ice cream sandwiches made with your chosen flavour, two homemade shortbread biscuits, and a generous chocolate dip.

I haven’t even mentioned the milkshakes yet, but here’s the bottom line: Lick! is only going to get busier as word spreads and the weather heats up, so become a regular now and find your favourite flavour. You won’t be able to stay away in summer, but at least you’ll be able to choose more quickly.
